A user on the Steam forums detailed a six-step guide to resetting the timer, and it's pretty straightforward. However, it requires the use of an external utility called the Steam Achievement Manager (SAM). (If you are an old Steam user, you may have used SAM to unlock weapons in Team Fortress 2.)
This is due to the fact that Capcom has taken the unusual step of using Steam's achievement system to track the time you spend on the demo. The final demo of Resident Evil Village is available on most gaming platforms until May 9th.
